Ingredients
- 2 red onion
- 1 red bell pepper
- 2 garlic cloves
- 2 table spoons oliven oil
- 2 eggs
- 100 ml butter
- 60 g flour
- ¼ tea spoon bake powder
- 3-4 table spoons grated parmesan
- 1 table spoons parsley
- 1 spring onion
- salt, pepper
Method
- STEP 1Heat oven to 200C.
- STEP 2Peel and cut red onions into wedges.
- STEP 3Peel and chop garlic cloves.
- STEP 4Slice red bell pepper.
- STEP 5Put vegetables into ceramic dish and mix with oliven oil.
- STEP 6Bake for 40 mins.
- STEP 7Meanwhile whisk eggs in a bowl, gradually add buttermilk, flour, bake powder and carry on beating until the batter is completely without lump-free.
- STEP 8Grate parmesan and chop parsly and spring onion.
- STEP 9Tip grated parmesan, chopped parsley and spring onion into batter and stir until combined.
- STEP 10Tip the batter into the ceramic dish with baked onions and combine.
- STEP 11Bake for 35 mins.
