Cheesy vegetable rice

Ingredients
- 1 onion
- 1 green pepper
- 2 tomatoes
- long grain white rice
- grated cheddar cheese
slice of bread for breadcrumbs

Method
- STEP 1Put the rice on to boil - as much as you would usually have for two people
- STEP 2Chop the onion and pepper and soften in another saucepan
- STEP 3Remove the skin from the tomatoes, chop and add to the onion and pepper once they have softened
- STEP 4Add the cooked, drained rice to the saucepan with the vegetables
- STEP 5Add a handful of grated cheese and mix all ingredients together
- STEP 6Mix the rest of the grated cheese with the breadcrumbs. Put the rice and vegetable mixture in an oven proof dish, top with the cheese and breadcrumbs and put under the grill until cheese has melted and golden brown
