Easy to cook, comforting vegetable rice

  • 1 onion
  • 1 green pepper
  • 2 tomatoes
  • long grain white rice
  • grated cheddar cheese
  • slice of bread for breadcrumbs


    1. Put the rice on to boil - as much as you would usually have for two people
    2. Chop the onion and pepper and soften in another saucepan
    3. Remove the skin from the tomatoes, chop and add to the onion and pepper once they have softened
    4. Add the cooked, drained rice to the saucepan with the vegetables
    5. Add a handful of grated cheese and mix all ingredients together
    6. Mix the rest of the grated cheese with the breadcrumbs. Put the rice and vegetable mixture in an oven proof dish, top with the cheese and breadcrumbs and put under the grill until cheese has melted and golden brown
