delicious and easy caribbean pork dish

  • 4-6 pork loin steaks or whatever cut you prefer
  • 1 tin of chopped tomatoes
  • 1 red onion diced
  • 1 carton of coconut cream
  • 1 cup of chicken stock
  • 1/2 tsp cinnamon
  • 1 tsp ground allspice
  • 1tsp ground coriander
  • 1tsp garlic granules
  • 1tsp ground ginger
  • good dash of rum or malibu (optional)
  • 1tbs oil


    1. cut pork into bitesize pieces and fry in oil
    2. add chopped onion and tinned tomatoes
    3. and all spices stir well and cook for a few minutes
    4. add chicken stock, optional rum and coconut cream simmer until cooked.. about 20 minutes
    5. serve with rice.. preferably rice and peas...enjoy

ive made this lots of times its quick and easy , ive made it using chicken and prawns as an alternative...
