Gorgeous cake for those who cannot have egg, also possible to be dairy free too

  • 200g Self raising flour
  • 200g Sugar
  • 150g Margerine (or vitalite for non - diary alternative)
  • 100ml Water
  • 1 teaspoon Vanilla essence
  • 2 table spoons chocolate powder or caoco


    1. Mix the sugar/ marg or vitalite into a bowl, stir until creamed
    2. Sieve in the self raising flour, chocolate powder and the vanilla essence, the mixture should be quite thick at this point.
    3. slowly pour in the water you may not need to use all of it or may need some extra, stir until the mixture is easy to stir, (please note the mixture will still be thick.
    4. Put the mixture into a small baking dish, and in the oven at 180C
    5. cook for 20 minutes. or until done

As a vegan family with 1 coeliac, all things food related can be problematic. However, I adapted this easy-peasy cake with gluten free flour + xanthan gum in place of regular self raising and the outcome was pretty good! It made a lovely moist cake which tasted fab and went down a treat with all, including a fussy child and fussier husband. Cooking time was longer, approx 30 mins and used all the water but that could be just the gluten free ingredients taking more moisture. Dusted with icing sugar to finish. Will def make again and such a simple, quick recipe.
