fresh, spicy, crunchy salad

  • For the Salsa:
  • 2 tomatoes - small cubed
  • 1 red chili - finely chopped
  • fresh baby spinach- 1 handful
  • 1 onion- finely chopped
  • 1/2 lemon - juice
  • 1 tbsp black olives- finely sliced
  • coriander - handful, chopped
  • salt and pepper -seasoning
  • fresh salad leaves- Handful
  • mixed raisins and nuts - 1/2 handful
  • 1 Tbsp black Olives
  • 3 slices of sainsburys Melba toast
  • equipment:
  • small plastic tub


    1. For the salsa, combine all ingredients in a small tub, once filled, close and shake to combine.
    2. In a serving bowl, place fresh salad leaves at the bottom. Spoon the salsa into the middle, sprinkle the mixed fruit and nuts around the salad. Add olives.
    3. Place the melba toast in a fan style at the side of the bowl, and serve, adding more lemon juice and seasoning if required
