Ingredients
- Red Onion
- Romano Peppers x 2
- Chorizo 100g
- paprika 1 tsp
- new potatoes 300g
- Spinach 2 handfuls
- parsley
- thyme
- manchego 100g
- eggs 8
Method
- STEP 1Heat grill. saute onions and peppers. Add chorizo, cooked potatoes and paprika.
- STEP 2Add spinach and herbs. Add cheese and eggs, ,ove eggs aroiund until they start to set. Then cook untouched for 2 mins or more.
- STEP 3Put under grill then let it settle for 10min before turning out.
