Ingredients
- 400g dried chickpeas
- 2 garlic cloves
- 1 medium onion, chopped
- 1tsp cumin
- Bunch parsley, chopped
- 1tsp salt
- 1tsp baking soda
- 5tbsp lime/lemon juice
- 4tbsp oil
- 1-2 chillies (to taste)
- 20g kale
- handful walnuts
Method
- STEP 1First put chickpeas in a pan and soak in water overnight or until they've tripled in size. If needed Add more water to keep submerged.
- STEP 2Once chickpeas have soaked drain them thoroughly. Preheat oven to 200'c/400 F/gas 6.
- STEP 3Then put everything in a blender or food processor and blitz, adding seasons to taste. Blitz till a lumpy consistency (so it holds if you squeeze)
- STEP 4Next, line a tray with baking paper and brush lightly with oil.
- STEP 5Take the falafel mix and roll into 1-2inch ball in hands and flatten a little on tray. Once you've rolled all falafel on the tray brush a little oil on top of them.
- STEP 6Put in the oven for 15-20mins on each side until golden. Serve with couscous, pitta bread or salad and dips!
