Oven cooked Green falafels are the BOMB! This Fun to make Mediterranean meal is healthy and fresh. can keep in fridge and have for future lunches.

  • 400g dried chickpeas
  • 2 garlic cloves
  • 1 medium onion, chopped
  • 1tsp cumin
  • Bunch parsley, chopped
  • 1tsp salt
  • 1tsp baking soda
  • 5tbsp lime/lemon juice
  • 4tbsp oil
  • 1-2 chillies (to taste)
  • 20g kale
  • handful walnuts


  1. First put chickpeas in a pan and soak in water overnight or until they've tripled in size. If needed Add more water to keep submerged.

  2. Once chickpeas have soaked drain them thoroughly. Preheat oven to 200'c/400 F/gas 6.

  3. Then put everything in a blender or food processor and blitz, adding seasons to taste. Blitz till a lumpy consistency (so it holds if you squeeze)

  4. Next, line a tray with baking paper and brush lightly with oil.

  5. Take the falafel mix and roll into 1-2inch ball in hands and flatten a little on tray. Once you've rolled all falafel on the tray brush a little oil on top of them.

  6. Put in the oven for 15-20mins on each side until golden. Serve with couscous, pitta bread or salad and dips!
