  • 400g dried chickpeas
  • 2 garlic cloves
  • 1 medium onion, chopped
  • 1tsp cumin
  • Bunch parsley, chopped
  • 1tsp salt
  • 1tsp baking soda
  • 5tbsp lime/lemon juice
  • 4tbsp oil
  • 1-2 chillies (to taste)
  • 20g kale
  • handful walnuts

    Method

    • step 1

      First put chickpeas in a pan and soak in water overnight or until they've tripled in size. If needed Add more water to keep submerged.
    • step 2

      Once chickpeas have soaked drain them thoroughly. Preheat oven to 200'c/400 F/gas 6.
    • step 3

      Then put everything in a blender or food processor and blitz, adding seasons to taste. Blitz till a lumpy consistency (so it holds if you squeeze)

      Next, line a tray with baking paper and brush lightly with oil.
    • step 5

      Take the falafel mix and roll into 1-2inch ball in hands and flatten a little on tray. Once you've rolled all falafel on the tray brush a little oil on top of them.

      Put in the oven for 15-20mins on each side until golden. Serve with couscous, pitta bread or salad and dips!
