Ingredients

  • 90g plain white flour
  • 115g barley flour
  • 70g sugar
  • 2 eggs
  • 45ml olive oil
  • 40ml orange juice
  • 1 large banana
  • 1 tsp of baking powder
  • ¼ teaspoon of salt

Method

  • STEP 1
    Preheat oven to 180c or 350F Bake for 20-25 minutes.
  • STEP 2
    Combine all dry ingredients in a bowl.
  • STEP 3
    In separate bowl mix together all wet ingredients until mix is thick and creamy. Add the wet mixture to the dry ingredients and mix well.
  • STEP 4
    Split into 6 muffin cases.
