  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 onion
  • 1 tin of chopped tomatoes
  • 400ml chicken stock
  • 3 cloves of garlic
  • 1 pepper (any colour)
  • Handful of mushrooms
  • 1 courgette
  • Handful of sugar snap peas / mange tout
  • 1 tin of chick peas
  • 2 red chillies (optional)
  • 400g chicken breast
  • 4 small / 2 large sweet potatoes (chopped)
  • 1 small tin of sweetcorn
  • Handful of spinach
  • Handful of coriander


    1. Heat oil and spices in a pan. Add onions and cook for a couple of minutes.
    2. Add chopped tomatoes and chicken stock and bring to the boil.
    3. Add all veg (except spinach) and season well.
    4. Bring to the boil and simmer for 30 mins.
    5. Check potatoes are nice and soft. Slightly crush potatoes whilst in pot.
    6. Add spinach and coriander and leave for another 5 minutes.
