Fresh pineapple an interesting and refreshing starter or desert

  • 1 pineapple, peeled, quartered and core removed
  • pomegranate seeds
  • coconut yoghurt or ice cream
  • dessicated coconut to garnish


    1. Slice pineapple on a mandolin or on 2mm slicer of a food processor
    2. Arrange in concentric circles leaving a space in the centre
    3. Place a scoop of coconut yoghurt or ice cream in the centre
    4. sprinkle with dessicated coconut and sprinkle with pomegranate seeds
    5. chill until required
