Really tasty and simple recipe. Perfect for a midweek meal. I chose to leave the skin on the sweet potatoes (after a good scrub) and it gave the mash a nice rustic look and was even more filling. Would definitely recommend this recipe. Thanks for sharing with us!

Such a quick, easy and delicious meal. Never would have thought about the ginger in sweet potato mash but it most definitely worked. I also added some chilli flakes to give it a bit of a kick. Surprisingly yummy and can't wait to have it again :)
