an infuse olive oil with garlic to give kick in dishes that is required olive oil

  • 1 liter Olive Oil
  • 6 clove of garlic
  • 4 sprig of Rosemary


    1. put olive oil in a 1.5 liter container.
    2. peel and crush all the garlic.
    3. put crushed garlic into the oil and let it sit for 5 hours.
    4. when done you pour infuse oil for bread, grilled lamb, hot risotto etc.

You have to be very careful using the cold infusion method as clostridium botulinum is able to grow in it and cause botulism. It's necessary to heat the oil to kill the bacterium if you are keeping the oil for more than a day.

This can be adjust to you preference on the garlic and rosemary, or even you can omit the rosemary change with dried chili or none at all. You can play around with garlic, dried chili, dried tomatoes, etc. either combine or individual. My suggestion that play around with the recipe. If you don't have 1 liter olive oil, that is alright just reduce the garlic and rosemary. no strict rule for these. Just make it the way you like it. THAT IS FUN ABOUT COOKING making it to suits our taste. have fun testing it. :)
