Preheat the oven to gas mark 4/165C. Crush the biscuits by putting them in a freezing bag and bashing with a rolling pin. Mix with the honey and butter. Flatten into a flan tin and bake for no more than 10 minutes. (Do not worry if it puffs up a little)

While leaving to cool, mix all of the filling ingredients together and pour into the biscuit base. Cook for 25-35 minutes or until set.
