oven baked cod loin with sliced leeks and rosemary

  • 2 sprigs of fresh rosemary
  • 1 tbsp olive oil
  • 3/4 pint water
  • 4 200g cod loins skinless and boneless
  • 2 washed and sliced leeks
  • 2 lemons, quarted
  • salt and pepper


    1. preheat oven to 200C/electric180C/fan Gas 6
    2. put cod loins onto a foiled oven dish. Drizzle a little olive oil over and turn cod over add salt and pepper, then add some sliced leeks. Turn cod over again and put remaining sliced leeks over the top. place the sprigs of rosemary over the cod and add the water.
    3. Bring the foil together to make a parcel shape or place another peice of foil over top and press together to make the peices join. Place oven dish in center of oven and bake for 20 minutes.
    4. remove oven dish from oven after the 20 minutes and serve with salad and lemon wedges or baby potatoes, lemon wedges and veg.

Never mind the spelling mistake was there something missing in the ingredients, this was very bland! I tipped out some of the water & added some grain mustard to try to get some flavour in.

It seems to me that the recipe calls for far too much water. Perhaps that's why Kazzie's turned to be tasteless. With so much water, surely the cod is being boiled, not baked. I also felt that 20 minutes wasn't enough for 800g of cod. Even with a small amount of water, mine would have been better done had it been cooked for 30 mins. As for the spelling issue, I abhor poor spelling, but would never normally take this up publicly with another poster. That person has shared their views as best they can, and that should be respected. This does not stop me, all the same, from privately pointing out spelling and grammatical errors made by professional writers such as journalists. The BBC websites receive plenty of such messages, and thank goodness for it.

Haven't tried the recipe yet but I'm doing it today with a proper piece of loin of cod which cost £5.51. and, it's about cooking, not spelling!

Kalem .... get a life ! What is wrong with you ? People can put recipes on here with spelling mistakes ... so what ... if you know anything about cooking you will be able to follow their instructions / ingredients. No need to be so pompous !

Am I missing something??? I have just made this and had to literally drench it in the lemon to try and give it a hint of some flavour. Really disappointed, especially as it's going straight in the bin. What a waste!

Great recipe! Easy to make and very nice to taste! My family loved it. We'll definitely do again!

I work in catering and I am always trying to promote healthy eating to the staff. I had used a simular recipe using cod that had been wrapped in smoked bacon with rosemary, but wanted to cut out any extra fat and to let the flavour of the cod through more. By using the sliced leeks I felt I was incorporating a healthy light lunch to the staff. It went down really well and use the cod loins on our "fish day" all the time.
