Spicy Lentil Soup

Ingredients
- 2 tbsp oil
- 2 red onions
- 1 chilli 2 garlic cloves
- (1" fresh lemon grass)
- 200g red lentils
- 1 tsp ground coriander
- 1 tsp paprika
- 400ml coconut milk
- 1lime juice
- 2spring onions
- 1 oz fresh coriander
- salt and pepper to taste
Method
- STEP 1fry onions, garlic and lemon grass for about 5v minutes
- STEP 2Add lentils (rinsed), spices and coconut milk
- STEP 3Add1 half pints of water or stock bring to boil and simmer for 45 minutes
- STEP 4Pour in lime juice and add spring onions
- STEP 5Add fresh coriander, season and ladle out.
- STEP 6Garnish with coriander and spring onions
