Very nice slightly spiced soup

  • 2 tbsp oil
  • 2 red onions
  • 1 chilli 2 garlic cloves
  • (1" fresh lemon grass)
  • 200g red lentils
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 400ml coconut milk
  • 1lime juice
  • 2spring onions
  • 1 oz fresh coriander
  • salt and pepper to taste


    1. fry onions, garlic and lemon grass for about 5v minutes
    2. Add lentils (rinsed), spices and coconut milk
    3. Add1 half pints of water or stock bring to boil and simmer for 45 minutes
    4. Pour in lime juice and add spring onions
    5. Add fresh coriander, season and ladle out.
    6. Garnish with coriander and spring onions
