Great for refuelling and rebuilding as a post-workout supper. You can change up the flavours by adding herbs, spices and seasoning as you desire. Also, the addition of superfoods, such as chia and/or flax can give it a little extra boost if you wish.
65g brown rice
1 ripe banana
4 small button mushrooms
Cook rice in a microwavable bowl for around 20 minutes, checking water levels regularly.
Meanwhile, slice the banana and mushroom (can then be cooked if desired).
Immediately on removing the cooked rice from the microwave, add in the mushrooms and banana and mix together. This will take the edge off the raw mushrooms. Serve and enjoy!
