Goat's cheese and dates salad

Ingredients
- 80 g mixed lettuce (rucola is nice with it)
- 1 courgette, in pieces of 1 cm
- 1 red onion
- 4 dates, cut into pieces
- 30 g walnuts
- 70 g soft goat cheese
- 2 tbsp olive oil
- 4 tbsp balsamico
Method
- STEP 1Cut the courgette in pieces and chop the onion. Heat up a frying pan with some olive oil. Bake the courgette, together with onion until ready. Remove from the heat and add the balsamico.
- STEP 2Cut the dates. Put the lettuce on two plates, followed by the courgette and red onion, dates and walnuts. At last crumble the goat cheese on top.
