  • 80 g mixed lettuce (rucola is nice with it)
  • 1 courgette, in pieces of 1 cm
  • 1 red onion
  • 4 dates, cut into pieces
  • 30 g walnuts
  • 70 g soft goat cheese
  • 2 tbsp olive oil
  • 4 tbsp balsamico

    1. Cut the courgette in pieces and chop the onion. Heat up a frying pan with some olive oil. Bake the courgette, together with onion until ready. Remove from the heat and add the balsamico.
    2. Cut the dates. Put the lettuce on two plates, followed by the courgette and red onion, dates and walnuts. At last crumble the goat cheese on top.
