Ingredients

  • 80 g mixed lettuce (rucola is nice with it)
  • 1 courgette, in pieces of 1 cm
  • 1 red onion
  • 4 dates, cut into pieces
  • 30 g walnuts
  • 70 g soft goat cheese
  • 2 tbsp olive oil
  • 4 tbsp balsamico

Method

  • STEP 1
    Cut the courgette in pieces and chop the onion. Heat up a frying pan with some olive oil. Bake the courgette, together with onion until ready. Remove from the heat and add the balsamico.
  • STEP 2
    Cut the dates. Put the lettuce on two plates, followed by the courgette and red onion, dates and walnuts. At last crumble the goat cheese on top.
