  • 2 very ripe large bananas
  • 3 eggs
  • gluten free flour blend
  • baking powder
  • cocoa powder
  • pinch of salt
  • 2 teaspoons of olive oil
  • olive butter to grease the baking dish


  1. mash the bananas, add eggs, add flour, baking powder, cocoa powder, pinch of salt and olive oil, mix well together

  2. grease and flour the baking dish, pour mixture in there and bake for about half an hour on 140 degress
