Sausages with root veg and mixed beans in a tomato herby sauce with a thin and crispy potato topping.

  • 3-5 Lancashire sausages
  • For the Sauce:
  • Tomato puree 150g
  • Onion 100g
  • Chicken stock 750g
  • Sage 7g
  • Salt 4g
  • Pepper 6g
  • Mixed beans:
  • Cannelloni 20g
  • Kidney 20g
  • Butter 20g
  • Vegetables:
  • Sweet potato 30g
  • Carrots 25g
  • Marie potatoes 75g
  • Leeks 25g
  • Onion 25g


    1. Pre heat the oven to 180C/Gas 6
    2. Wash/chop and blanch all vegetables, fry the leek and onion until softened.
    3. fry the sausages drip of any fat, cut into small pieces.
    4. For the sauce, Soften onion in oil, add tomato puree and chicken stock, add in sage, and salt and pepper, and required extra water. Bring to boil add in slurry stir constsntly until thickened
    5. Assemble all vegetables and sausgaes pour over sauce.
    6. Shallow fry sliced potatoes.
    7. Assemble all vegetables and sausgaes pour over sauce. Place sliced potatoes on top of ingrediants.
