Creamy smoked salmon pasta

  • 500 g pasta (penne or other)
  • 1 tbsp butter
  • 1-2 cloves garlic, finely chopped
  • 1small red (or white) onion, finely chopped
  • Juice of 1 lemon
  • 200 g Cream Cheese
  • 15ml single cream if desired
  • 120-200g smoked salmon, minced smoked
  • salmon trimmings work well.
  • To season
  • Black pepper
  • Salt


    1. Cook The pasta according to the packet instructions.
    2. Melt the butter in a pan (large enough to mix the pasta in later).
    3. Add garlic and onions and cook until onions are softened.
    4. Mix the lemon juice in with the onions.
    5. Add the cream cheese (and single cream if desired) and salmon pieces and warm through.
    6. Drain the cooked pasta and mix with the sauce.
    7. Season to taste.

This recipe didn't produce nearly enough sauce for my liking, even after I halved the quantity of pasta.

I made this recipe this evening and it was very good but I made a number of changes to the recipe. Firstly I boiled broccoli for 3 mins with the pasta, I used fresh pasta. Broccoli not only tasted good with the sauce but added some colour to the final dish, which was much needed. Once the onions and garlic had softened I added a half a glass of white wine and allowed this to cook off until nearly evaporated. I then added the light soft cheese. I also added a good splash of low fat creme fraich to loosen the sauce. I feel these changes lifted a so so recipe to something very enjoyable!
