An impressive picnic sandwich

  • 2 red peppers
  • 2 yellow peppers
  • 1 courgtte, thinly sliced
  • 1 medium unsliced loaf
  • 50g watercress
  • 125g feta cheese
  • 3 slices of ham
  • 50g tomatoes


    1. Preheat grill, halve and deseed peppers place on a baking tray under grill unitl skins turn black. Place courgettes on a separate baking tray and grill until just cooked. Peel peppers.
    2. Cut the lid off the loaf and pull out the middle, leaving a good crust so it will keep its shape once filled. Layer all the ingredients inside, season with black pepper.
    3. Replace the lid, wrap in cling film and chill in the fridge for 1hr.
