Cypriot cake my mum's version based on our old family recipe

  • 2 cups of semolina
  • 1 cup of cooking oil
  • 1 cup of sugar
  • 1 cup natural yoghurt
  • 2 eggs
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • Syrup
  • 2 cups of sugar
  • 1 1/2 cups water
  • tablespoon lemon juice
  • vanilla pod
  • Almonds to decorate


    1. beat together the oil and sugar and add the eggs
    2. Sift in the bicarbonate of soda and baking powder add the semolina and yoghurt
    3. Cook in a moderate oven for 30 minutes
    4. For the syrup put the water, sugar, lemon juice and vanilla pod in a pan and boil for 10 minutes
    5. When the cake has cooled add the almonds and cut into diagonals and add the hot syrup.

This was lovely. My friends and I decided to have a Cyprus Night and I made this. I found I didn't need to make as much syrup as the recipe said and had to convert the measurements to metric but it worked just fine. We ate it with homemade vanilla icecream and apricots with cream cheese and pistachios. Very nice indeed! Thank you Lenni. Hope you have more recipes you can share.
