An easy to make Thai salad featuring cucumber

  • 1 cucumber
  • 1 shallot, grated
  • 2 spring onions, finely sliced
  • 1 mild fresh chili
  • 0.5 cup fresh corriander
  • 0.25 cup roughly chopped dry roasted peanuts


  • 2 tbsp fish sauce
  • 0.5 lime juice
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 0.25 tsp cayenne pepper
  • 1 tsp sugar or equivilent


  1. Cut cucumber to make batons. Place in a bowl.

  2. Add the shallot, spring onion, chili and coriander to the bowl.

  3. Mix the dressing ingredients in a cup and ensure sugar is dissolved.

  4. Finally, put peanuts on top of salad and serve immediately.
