Thai Cucumber Salad - Easy

Ingredients
Salad
- 1 cucumber
- 1 shallot, grated
- 2 spring onions, finely sliced
- 1 mild fresh chili
- 0.5 cup fresh corriander
- 0.25 cup roughly chopped dry roasted peanuts
Dressing
- 1 cucumber
- 1 shallot, grated
- 2 spring onions, finely sliced

- 2 tbsp fish sauce
- 0.5 lime juice
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 0.25 tsp cayenne pepper
- 1 tsp sugar or equivilent
Method
- STEP 1Cut cucumber to make batons. Place in a bowl.
- STEP 2Add the shallot, spring onion, chili and coriander to the bowl.
- STEP 3Mix the dressing ingredients in a cup and ensure sugar is dissolved.
- STEP 4Finally, put peanuts on top of salad and serve immediately.
