Ingredients
- 4 eggs
- 3/4 cup vegetable oil
- 1/2 cup brown sugar
- 4 cups all bran flakes
- 5 cups plain flour
- 1 tsp vanilla
- 250g raisins or sultanas or chocolate chips
- 4 cups milk ( or 2 cups milk and 2 cups buttermilk)
- 5 tsp bicarbonate of soda
- 1 tsp salt
Method
- STEP 1Beat the eggs and oil together until creamy
- STEP 2Then mix together with all the other ingredients And leave overnight in the fridge
- STEP 3Pre-heat oven to 180C/fan 160C/gas 6
- STEP 4line a 12 hole muffin tin with muffin cups and spoon in the mixture until the cups are almost full
- STEP 5Bake for 15-20 minutes or until lightly browned and cooked through
- STEP 6This mixture makes more than 12 muffins at a time and can be kept in the fridge for up to 6 weeks. Make fresh muffins every day!
