A simple light sponge cake

Cake
- 200g Caster Sugar
- 200g Softened Butter
- 4 medium Eggs, beaten
- 200g Self-raising Flour
- 1tsp Baking Powder
- 2 tbsp Milk
Filling
- 200g Caster Sugar
- 200g Softened Butter
- 4 medium Eggs, beaten
- 200g Self-raising Flour
- 1tsp Baking Powder
- 2 tbsp Milk
- Whipped Cream
- Jar of Homemade Jam
Method
step 1
Heat oven to 190C Butter two sandwich tins.step 2
Cream the sugar and butter together until soft and fluffy.step 3
Add the eggs and mix together, then add the flour, baking powder and milk. Mix altogether until a smooth batter consistency is reached.step 4
Split the mixture between the two tins. Smooth until level, then bake for approximately 20 minutes until golden brown.step 5
Leave to cool then spread a generous amount of jam then whipped cream on one of the sponges. Then place the other on top.
