A simple light sponge cake

Ingredients

Cake

  • 200g Caster Sugar
  • 200g Softened Butter
  • 4 medium Eggs, beaten
  • 200g Self-raising Flour
  • 1tsp Baking Powder
  • 2 tbsp Milk

Filling

  • Whipped Cream
  • Jar of Homemade Jam

Method

  1. Heat oven to 190C Butter two sandwich tins.

  2. Cream the sugar and butter together until soft and fluffy.

  3. Add the eggs and mix together, then add the flour, baking powder and milk. Mix altogether until a smooth batter consistency is reached.

  4. Split the mixture between the two tins. Smooth until level, then bake for approximately 20 minutes until golden brown.

  5. Leave to cool then spread a generous amount of jam then whipped cream on one of the sponges. Then place the other on top.
