  • 1 cup dried Quinoa
  • 1/2 cup dried cranberries
  • 1/3 cup olive oil
  • 3 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 5 cups baby spinach
  • 1/2 cup diced red onion
  • 1 yellow pepper diced


  1. Cook Quinoa

  2. Whisk oil, vinegar and salt in large bowl

  3. Stir in cooked quinoa, cranberries, spinach, onion and yellow pepper.
