  • 1 tbsp unsalted butter
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 2 tsp vanilla extract
  • Pinch of salt
  • 1 egg yolk
  • 3 tbsp plain flour
  • 1-2 tbsp chocolate chips


  1. Put the butter in a mug and melt in the microwave until it has melted but is not boiling. This should take 30-60 seconds.

  2. Take it out and add the sugar, salt and vanilla extract, mix until well-combined. Then add the egg yolk and mix in until there are no traces of egg are seen. Mix in the flour and then fold in the chocolate chips. (I suggest 1 tbsp of chocolate chips otherwise it is too sickly).

  3. Microwave for 40 seconds (maximum 50 seconds). The cookie may look under cooked but do not overheat!

  4. Serve warm with a dollop of ice cream. Serves 1 or 2 if there are smaller portions.
