• 1 tbsp unsalted butter
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 2 tsp vanilla extract
  • Pinch of salt
  • 1 egg yolk
  • 3 tbsp plain flour
  • 1-2 tbsp chocolate chips


  • STEP 1
    Put the butter in a mug and melt in the microwave until it has melted but is not boiling. This should take 30-60 seconds.
  • STEP 2
    Take it out and add the sugar, salt and vanilla extract, mix until well-combined. Then add the egg yolk and mix in until there are no traces of egg are seen. Mix in the flour and then fold in the chocolate chips. (I suggest 1 tbsp of chocolate chips otherwise it is too sickly).
  • STEP 3
    Microwave for 40 seconds (maximum 50 seconds). The cookie may look under cooked but do not overheat!
  • STEP 4
    Serve warm with a dollop of ice cream. Serves 1 or 2 if there are smaller portions.
