Ingredients
- 1 tbsp unsalted butter
- 1 tbsp granulated sugar
- 1 tbsp brown sugar
- 2 tsp vanilla extract
- Pinch of salt
- 1 egg yolk
- 3 tbsp plain flour
- 1-2 tbsp chocolate chips
Method
- STEP 1Put the butter in a mug and melt in the microwave until it has melted but is not boiling. This should take 30-60 seconds.
- STEP 2Take it out and add the sugar, salt and vanilla extract, mix until well-combined. Then add the egg yolk and mix in until there are no traces of egg are seen. Mix in the flour and then fold in the chocolate chips. (I suggest 1 tbsp of chocolate chips otherwise it is too sickly).
- STEP 3Microwave for 40 seconds (maximum 50 seconds). The cookie may look under cooked but do not overheat!
- STEP 4Serve warm with a dollop of ice cream. Serves 1 or 2 if there are smaller portions.
