boil/steam the cauliflower until soft but not crumbling

cut the aubergine into rings, slice the pepper and halve the tomatoes

cover a baking dish in spices then roll the vegetables, including the cauliflower around in it until mostly covered

put in the oven at 180/200 fan for about 25 mins cover with cheese if desired and baked in oven for further few minutes until melted

A really tasty recipe . I omitted the red pepper( as I didn’t have one to hand ) . I used harissa paste as a spice along with a sprinkle of smoked paprika. Will definitely make this again !
