  • 4oz soft butter (non-salted)
  • 6oz golden caster sugar
  • 8oz Self raising flour
  • 2 large eggs
  • 3 large, very ripe banana's


    1. Heat oven to 180 , grease 2lb loaf or cake tin
    2. mash banana's with a fork, until smooth
    3. Cream butter & sugar together and slowly add the eggs
    4. Mix the two bowls of golden mixture together, fold in the sifted flour, scape into loaf or cake tin
    5. Bake for 40 mins then lower temp to 150 for a further 30 mins
    6. leave to cool and enjoy

This is the most scrumptios banana cake I have ever eaten. Cooking times perfect, follow them exactly and you cant go wrong. After I had prepared all the ingredients I realised I had no eggs!!!!! Looked up a substitute and read that eggs are used for lightening in baking...and was advised to use banana or apple sauce so I did! All together I used 4 bananas and 1 tbsp apple sauce and would do this the next time even if I had eggs! I also added 1 tbsp of vanilla essence, in future will try with sultanas just didnt have any this time. The cake is lovely light and moist my husband just asked for a second piece, better go and get it!!! Cant wait to make my next one!

Very easy to make, tastes delicious.. added a little spice as another user suggested. Would highly recommend this!

A very nice cake, I added some left over Christmas Thorntons rum and raisin fudge chopped into little cubes! Result... scrummy!! We ate some warm and this was lovely, but a little stodgy. Not sure if that was because of the fudge though?!

This is a simple but very tasty recipe, we all enjoyed it. Am going to make two for Christmas to take to work.

Just made this morning and had to tweak as had run out of caster sugar! Used soft brown sugar instead and added a few dark choc chips, Mmmmm Delicious. Fantastic way to use up banana's I ordered shopping online and had a glut!

Made this yesterday, my family normally hate banana cake. But they loved this one. I added ground mixed spice and currants, and it was a hit! Will be making this again for sure.

I always add a teaspoon of ground cinnamon and some chocolate chips to this recipe. yummy!
