  • 2 large jacket potatoes
  • Seasoning of your choice


    1. Pre heat oven to 200C or Gas Mark 6.
    2. Prick the jacket potatoes all over and cook on maximum power in the microwave for about 8 minutes. Large jackets may need longer.
    3. Cut the potatoes into wedges.
    4. Coat with seasoning and bake in the oven for about 10 minutes to brown and crispen.

Really great, quick and healthy way of doing wedges, as they come out crispy on the outside but soft and fluffy on the inside. I season with mixed herbs, garlic, a little turmeric and a couple of drops of avocado oil. I have tried many recipes where the potatoes go in raw but they always take forever and aren't the best texture. I have used this recipe several times and they always come out perfect (although sometimes have needed slightly longer than 10 minutes).
