Tomato, Pepper & Lemon Salad

Ingredients
- 3 large tomatoes, diced
- 2 green peppers, diced
- 1 preserved lemon
- 1 tbsp lemon juice
- 1 clove of garlic, chopped
- half a tsp ground cumin
- 2 tbsp olive oil
- 1 red onion, finely chopped
- 1 tbsp capers, rinsed and chopped
- 1 large handful fresh coriander, chopped
- salt and black pepper
Method
- STEP 1Rinse the preserved lemon, cut in half, remove and discard the pulp, and dice the peel. Put into a bowl.
- STEP 2Add the remaining ingredients, except the coriander. Mix well.
- STEP 3Season, and scatter over the coriander.
