- STEP 1
Basic cookie dough : Mix the butter and sugar together until light and fluffy. Mix in the egg and the vanilla essence. Add the salt and baking powder to the flour and sift into the butter sugar mix. Stir together to get a soft dough. Turn out on to a floured surface and shape the dough into a smooth circle. Wrap in cling film and chill in the fridge for at least 30 minutes before using.

Set the oven to 180 c.

cookies : Rollout the dough to around 5 mm thick and cut out your biscuits. Place them on a baking tray lined with grease proof paper. Now carefully cut a circle or smaller shape from the centre. Bake for 10 minutes.
- STEP 4
Meanwhile , place some unwrapped fruit sweets in a plastic bag. Wrap the bag in a tea towel and smash the sweets with a rolling pin. Take out the partly baked cookies.
- STEP 5
Fill the centre holes with the broken sweets and pop back in for another 5 - 8 minutes till the cookies are pale gold. The sweets will melt to form a crystal gem in the middle.
