  • 2 tbsp rice or white wine vinegar
  • 1tsp sugar
  • Small pinch salt
  • 1 deseeded and finely chopped red chilli
  • Cucumber

Method

  • step 1

    Mix together the vinegar, sugar, salt and chilli
  • step 2

    Peel and halve cucumber and scoop out the seeds with teaspoon. Thinly slice and toss with the dressing
  • step 3

    Stand for 10 mins then serve
