fresh summer soup, perfect for using up a glut of courgettes

  • 1 large onion, chopped
  • 2 gloves garlic, sliced
  • 1 tbsp olive oil
  • 2 medium courgettes, diced
  • 700 ml vegetable stock
  • 100g grated parmesan


    1. in a large pot sweat the chopped onion and sliced garlic in the olive oil until golden
    2. add the courgettes and stock, bring to the boil and simmer for 15-20 minutes
    3. blend the soup until smooth, then add the parmesan and blend again
    4. serve immediately with fresh crusty bread
