Ingredients
- Skin on chicken quarters
- 2 onions
- 2 garlic cloves
- 2 large mushrooms
- Dash of cayenne
- Curry powder ( to taste)
- Pinch of salt
- 2 chicken stock cubes
- Corn flour (to thicken)
Method
- STEP 1Sprinkle curry powder on to skin of chicken then place in oven proof dish for 1hr
- STEP 2In a separate pan cook onions, mushrooms & garlic on the hob until soft
- STEP 3Add chicken stock, 2 tea spoons curry powder & dash of cayenne and bring to boil
- STEP 4Mix corn flour with cold water and add to pan with onions etc to thicken - stir quickly
- STEP 5Turn heat down to simmer then add cream and stir
- STEP 6After 1 hour take chicken from oven - either pour the creamy sauce over top or serve separately
- STEP 7Serve with basmati and wild rice and coriander & enjoy xx
