• Skin on chicken quarters
  • 2 onions
  • 2 garlic cloves
  • 2 large mushrooms
  • Dash of cayenne
  • Curry powder ( to taste)
  • Pinch of salt
  • 2 chicken stock cubes
  • Corn flour (to thicken)


  • STEP 1
    Sprinkle curry powder on to skin of chicken then place in oven proof dish for 1hr
  • STEP 2
    In a separate pan cook onions, mushrooms & garlic on the hob until soft
  • STEP 3
    Add chicken stock, 2 tea spoons curry powder & dash of cayenne and bring to boil
  • STEP 4
    Mix corn flour with cold water and add to pan with onions etc to thicken - stir quickly
  • STEP 5
    Turn heat down to simmer then add cream and stir
  • STEP 6
    After 1 hour take chicken from oven - either pour the creamy sauce over top or serve separately
  • STEP 7
    Serve with basmati and wild rice and coriander & enjoy xx
