Ingredients

  • 2 salmon fillets
  • 400g can black beans, drained
  • 227g can chopped tomatoes
  • 1 bunch coriander, finely chopped
  • 1 red chilli, finely chopped
  • Pinch of salt
  • Green salad to serve

Method

  • STEP 1
    In a bowl combine the black beans and tomatoes
  • STEP 2
    Stir in coriander, chilli and salt
  • STEP 3
    Cook the salmon fillets on a barbecue or pan fry for three or four minutes each side until cooked through
  • STEP 4
    Serve salmon with the salsa and a green salad
