Ostrich steaks with chilli sauce

Ingredients
- 4 ostrich steaks
- 2 tbsp soy sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp brown sugar
- 3 tbsp dry sherry or rice wine
- 1 tbsp light olive oil
- Salt and freshly ground black pepper
Method
- STEP 1mix all ingredients and marinade steaks for at least 20 mins
- STEP 2remove steaks from marinade and fry in oil for 4 min each side
- STEP 3remove steaks and rest
- STEP 4pour remainder of marinade into pan and reduce till sticky, serve steak with sticky glaze
