Sophie Michell's Green Olives with Clementines, Chilli and Ginger

Sophie Michell has created some delicious, quick and simple healthy snacks for the Olive it! campaign. Perfect for entertaining!
- 500g large green olives
- 2 red chilli peppers diced
- 2 fresh ginger diced
- 4 clementines, segmented and pith removed
- 1 tbsp of coriander leaves
- STEP 1Firstly dice the ginger and chili, then mix together with the olives and the juice of the clementines
- STEP 2Then arrange on in a bowl with the clementine segments arranged prettily
