An easy peasy recipe with healthy chicken and brocolli and simple to make.

  • 4 Chicken breasts
  • For the sauce:
  • 4 Tablespoons of mayonnaise
  • 4 Tablespoons of double cream
  • 1 teaspoon of medium curry powder
  • 1 Tin of Condensed Chicken & Mushroom Soup (Campbells)
  • 1lb Frozen brocolli
  • 4ozs of Grated mature cheddar cheese.


    1. Cook the chicken breasts for 20 minutes in a deep sided large casserole at 350F or Gas 4
    2. While chicken is part cooking mix throughly all the sauce ingredients
    3. When the chicken has been cooking for 20 minutes arrange the frozen brocolli around the chicken in the casserole.
    4. Pour the sauce evenly over the chicken breasts and brocolli and sprinkle with the grated cheese.
    5. Place back into the oven for a further 40 minutes or until golden brown. Enjoy with baby new potatoes and peas and carrotts.

I've been making this recipe for years not knowing where it originated from. I use fresh broccoli but boil it while the chicken is cooking just to take the bite out of it. I also use milk rather than cream, filling the soup tin three quaters full. And finally I top the cheese with breadcrumbs to give it some crunch on top. A real cosy winter warmer. Fab served with some garlic bread to mop up any excess sauce!

We made this dish but instead of broccoli (which we didn't have) we pan fried the chicken breast in butter with sliced leeks then continued as per original recipe. It was delicious!

Use fresh broccolli as the frozen stuff goes mushy! I also crumble a packet of crisps over the top mised with the chees for extra crunch.
