Buttercream is a pretty richly flavoured topping for cakes.

  • 175g of Icing Sugar
  • 75g of Butter


  • Cocoa Powder
  • Food Colouring
  • Vanilla/ Mint/ Strawberry (Any is fine) Extract


  1. After weighing out ingrediants, put them all in the bowl.

  2. Mix it all until it is pretty stiff.

  3. Now you can put it on your cake! (Or just eat the buttercream by itself, I don't really recommend it though...)

  4. Don't forget the washing up!

I have always used this recipe for buttercream. Consistently good and easily adapted. Enough for 12 cupcakes or the top icing of 1 cake. Should you want a very large filling in a sandwich cake plus enough for the top then I would suggest making a little extra.
