Ingredients

  • 3 eggs
  • Pepper
  • can of chopped tomatoes with herbs
  • Onion, chipped
  • garlic, crushed

Method

  • STEP 1
    Fry up the vegetables on low heat.
  • STEP 2
    Add the eggs at the point of cooking whe you are happy with the softness of the fried veg. Earlier for more crunchy or later for softer well cooked veg.
  • STEP 3
    Mix well and cook on slow.
