egg, pepper and tomato

- 3 eggs
- can of chopped tomatoes with herbs
- Onion, chipped
- garlic, crushed
- STEP 1Fry up the vegetables on low heat.
- STEP 2Add the eggs at the point of cooking whe you are happy with the softness of the fried veg. Earlier for more crunchy or later for softer well cooked veg.
- STEP 3Mix well and cook on slow.
