  • 300g new potatoes
  • 1.5 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp mustard (mix 1/4 dijon and 3/4 wholegrain)
  • handful capers
  • 4 anchovies
  • 2 spring onions
  • parsley
  • 2 tbsp mayonnaise

    Method

    • step 1

      Boil potatoes. Mix oil, vinegar and mustard and pour over drained hot potatoes. Cool.
    • step 2

      Mix in other ingredients.
    • step 3

      Serve with crispy bacon.
