Potato salad with capers and anchovies
- 300g new potatoes
- 1.5 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp mustard (mix 1/4 dijon and 3/4 wholegrain)
- handful capers
- 4 anchovies
- 2 spring onions
- 2 tbsp mayonnaise
- STEP 1Boil potatoes. Mix oil, vinegar and mustard and pour over drained hot potatoes. Cool.
- STEP 2Mix in other ingredients.
- STEP 3Serve with crispy bacon.
