Ingredients
- 3 large carrots
- 2 small onions
- 1 tblsp butter
- 1 tbsp curry powder
- 3 cups water
- stock cube
- 1 cup toasted cashew nuts
Method
- STEP 1Chop carrots & onions
- STEP 2Fry onions and curry powder in butter
- STEP 3Add carrots, water, stock cube and simmer till carrots soft
- STEP 4grind cashew nuts, add to soup and blend/liquidize before serving
