Ingredients

  • 3 large carrots
  • 2 small onions
  • 1 tblsp butter
  • 1 tbsp curry powder
  • 3 cups water
  • stock cube
  • 1 cup toasted cashew nuts

Method

  • STEP 1
    Chop carrots & onions
  • STEP 2
    Fry onions and curry powder in butter
  • STEP 3
    Add carrots, water, stock cube and simmer till carrots soft
  • STEP 4
    grind cashew nuts, add to soup and blend/liquidize before serving
