light delicious yummy and sweet great for any dessert perfect

  • 4 egg whites (duck egg whites are the best)
  • 300g caster sugar
  • pinch of salt
  • 1/2 teaspoon vanilla extract


    1. preheat oven to 140C fan 120C gas mark 1. Line 2 trays with greaseproof paper.
    2. Put eggs and salt in a bowl and mix until soft white peaks form.
    3. Add sugar tablespoon at a time.
    4. Fold in Vanilla extract
    5. spoon individually on to the trays and cook for 30 minutes.
    6. let cool then enjoy
