  • 1 Chorizo round, chopped into bitesize chunks
  • 3 garlic cloves, crushed
  • 1 med red onion, finely sliced
  • Pinch of chili flakes
  • 2 cans chopped tomatoes
  • 3 chicken breasts, precooked and cut into chunks
  • 8 rashers of bacon, grilled and sliced

    1. Put the chorizo in a large saucepan and fry for roughly 3 minutes until cook. Add the red onion, garlic and chilli flakes and cook until the red onion is tender
    2. Add the chopped tomatoes and warm them through, if spicier food is preffered, add a pinch more chilli!
    3. Stir in the chicken and the bacon, and heat until the mixture is bubbling. Serve immediatly. I find this works well with a bit of warmed bread for mopping up the tomatoes and maybe a crunchy green salad
