These cookies are a traditional Australian recipe. These were sent to the anzac's while they fought at Gallipoli, where my great great grandfather served for his country.

  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 tbsp golden syrup
  • 1 tsp bicarbonate of soda
  • 2 tbsp boiling water


    1. preheat oven 180C / 350F. mix together flour, oats, coconut and brown sugar
    2. melt butter and golden syrup in the microwave. Mix the mix bicarbonate of soda with the boiling water and add to the melted butter and Golden Syrup.
    3. Pour the liquids into the dry ingredients and mix well.
    4. roll spoonful by spoonful of mixture, about the size of a walnut shell and place onto an oven try lined with baking paper. leaving space again between dollops to allow for spreading.
    5. press dollops down with a fork to flaten and proceed to bake for 15-20 minutes, Cool on a wire rack and seal in airtight containers.

Warning: these biscuits expanded massively in the oven! What went in looking like perfectly formed and spaced biscuits came out as an extremely flat omni-biscuit about 0.3cm thick. I sprinkled with coconut, drizzled with chocolate and then sliced into squares like a traybake. They tasted delicious and the recipe is delightfully simple, but BEWARE HOW MUCH THEY WILL EXPAND IN THE OVEN. Also it might be possible to use less coconut (and less sugar?) and more oats to make it more economical and healthier. Very quick recipe!

These look delicious, I can't wait to try them! To answer other comments...1/2 cup of butter is equal to 1 stick (1/4 lb).

My dad and I just love the original Anzac cookies, but after making the same thing for awhile, I decided to try chocolate chips, and boy does it taste good. So next time try 1 cup of chocolate chips cookies!!!

found the measurements difficult - how do you measure half a cup of butter? Managed it, but would have preferred recipe to be in grams. Apart from that, biscuits are really lovely.

*cough* Australia AND New Zealand (2011 Rugby World Cup Winners). My Grandfathers also recieved golden syrup tins of ANZAC biscuits which we have every year on ANZAC day. I use brown sugar in stead of white sugar and they are almost caramel. Enjoy :D
