Vegetable Pasta Sauce

Great with pasta, spaghetti or even chicken. Also 3 of your daily required vegetables.

  • 1 Tin Tomatoes
  • 2 Courgette
  • 4 Carrots
  • 1 Garlic Clove
  • 1 Onion
  • 1 tbs Vegetable Oil
  • Salt and Pepper


    1. Chop the courgette, carrots, garlic and onion roughly and place in a blender. Blend until a puree.
    2. Put the vegetable oil and puree into a pan and heat. Add the tomatoes and a little boiling water and leave to boil.
    3. Add salt and pepper for taste.
    4. Serve over pasta, spaghetti or even chicken.

Put the courgette, carrots, garlic, fennel, parsnip, peppers on baking tray - fling into the oven until done - you might want to put the "heavier" veggies in first Finely chop purple onion, lightly cook in oil in pan add tomatoes from can. combine and serve.
