makes around 14 light fluffy cupcakes

  • 75g butter, softened
  • 100g self-raising flour
  • 75g caster sugar
  • 3 eggs
  • 50g cocoa powder
  • 20g chocolate chips (optional)


    1. Pre-heat the oven to 200 degrees c/ gas mark4
    2. Crack the eggs into a bowl
    3. add in the butter, sugar and cocoa powder
    4. cream the four ingredients
    5. sieve cocoa powder in and add chocolate chips
    6. mix for 5 minutes
    7. spoon into cake cases and bake for 15-20 minutes
    8. leave on a wire wrack to cool
    9. enjoy
