Tofu and Black Pepper

A great chinese starter


  • 1 block of firm Tofu

Groundnut oil for frying

  • Groundnut oil for frying

Cornflour for dusting

  • 6 Small shallots, peeled and slices
  • I heaped tsp of ready prepared garlic (such as Barts)
  • 1 leaped tsp of ready prepared ginger (such as Barts)
  • Dried flaked red chillies to taste
  • 2 tbsp sweet soy sauce (Ketsup Manis)
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp castor sugar
  • 2-3 tbsp coarse ground black pepper (to taste)
  • 4 Spring onions sliced diagonally


  • STEP 1
    Cut the Tofu into cubes 3 x 2cm and toss in cornflour, shake off excess
  • STEP 2
    Heat enough groundnut oil in a frying pan to come 2 - 3 mm up the sides of the pan
  • STEP 3
    Fry the tofu in batches if necessary, turning them until they are golden brown, remove and drain on kitchen paper
  • STEP 4
    C;lean the pan and then add 1 tbsp of oil add the shallots, garlic and ginger. Saute over a low heat until the shallots are soft
  • STEP 5
    Add the soy sauces, pepper and sugar and stir, add the chillies to taste.
  • STEP 6
    Add the tofu and stir to heat through, stir in the spring onions
  • STEP 7
    Serve as a starter as part of a Chinese meal
