A great chinese starter

  • 1 block of firm Tofu
  • Groundnut oil for frying
  • Cornflour for dusting
  • 6 Small shallots, peeled and slices
  • I heaped tsp of ready prepared garlic (such as Barts)
  • 1 leaped tsp of ready prepared ginger (such as Barts)
  • Dried flaked red chillies to taste
  • 2 tbsp sweet soy sauce (Ketsup Manis)
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp castor sugar
  • 2-3 tbsp coarse ground black pepper (to taste)
  • 4 Spring onions sliced diagonally


    1. Cut the Tofu into cubes 3 x 2cm and toss in cornflour, shake off excess
    2. Heat enough groundnut oil in a frying pan to come 2 - 3 mm up the sides of the pan
    3. Fry the tofu in batches if necessary, turning them until they are golden brown, remove and drain on kitchen paper
    4. C;lean the pan and then add 1 tbsp of oil add the shallots, garlic and ginger. Saute over a low heat until the shallots are soft
    5. Add the soy sauces, pepper and sugar and stir, add the chillies to taste.
    6. Add the tofu and stir to heat through, stir in the spring onions
    7. Serve as a starter as part of a Chinese meal
