  • 1 tbsp olive oil
  • 1 onion
  • 1 clove garlic
  • 1 tsp ginger
  • 1-11/2 tspms red thai curry paste
  • 1lb sweet potato
  • 1/2 pint chicken stock
  • 7fl oz coconut milk
  • salt
  • pepper


    1. heat oil and add onoin and garlic, cover and cook for 10 mins
    2. stir in ginger and curry paste and cook for 1 minute
    3. add potato, stock and coconut milk. Bring to boil, cover and simmer for 20 mins
    4. liquidise until smooth

Yummy soup. Great with fresh rustic bread and the smoked aubergine dip - - if you use coriander (lots of it) Pls use the metric system, it's an international standard :-)
